Finding delicious and satisfying low carb meals for lunch isn’t always easy. But with a little creativity, you can enjoy a variety of tasty options. These first 3 low carb recipes are perfect for a quick and easy midday meal that will keep you fueled and focused throughout the afternoon.

Lettuce Wraps with Chicken and Avocado 

For a light and refreshing low carb lunch, try making lettuce wraps with grilled chicken and creamy avocado. Season chicken breasts with salt, pepper, and your favorite herbs, then grill until cooked through. Slice the chicken and place it inside large lettuce leaves, along with sliced avocado, diced tomatoes, and a drizzle of olive oil and lemon juice.

Cauliflower Rice Stir-Fry 

Cauliflower rice is a fantastic low carb alternative to traditional rice, which makes it perfect for stir-fry low carb recipes. Sauté cauliflower rice in a pan with your choice of vegetables, such as bell peppers, onions, and carrots. Add in some protein, like shrimp or tofu, and season with soy sauce, ginger, and garlic for a flavorful and satisfying meal.

Caprese Salad Skewers 

For fun and easy low carb meals at lunch, assemble Caprese salad skewers. Thread cherry tomatoes, fresh mozzarella balls, and basil leaves onto skewers, then drizzle with balsamic vinegar and olive oil. These skewers are a great way to enjoy the classic flavors of a Caprese salad without the need for bread or pasta.

Low Carb Dinner Recipes

Preparing dinner can feel like a chore whether you’re feeding a family or trying to put something together for yourself at the end of a long day. Don’t let low carb cooking stress you out. Here are three low carb dinner ideas that can be made quickly. 

Foil-Baked Salmon with Asparagus and Mushrooms

Who doesn’t love an evening meal you can wrap in foil and toss on the grill or in the oven to cook? These kinds of low carb dinners allow flavors to meld together.

This recipe combines omega-3-rich salmon filets with asparagus spears and sliced mushrooms, plus a garlicky butter lemon sauce that melts onto everything as it cooks. All you have to do is mix together a little hot sauce, broth, and lemon juice in a dish, place salmon filets, sliced mushrooms, and asparagus spears in foil, and drizzle it over them.

Sprinkle some minced garlic and butter over everything and then fold the edges of the foil around your ingredients to create an individual cooking compartment. Bake in the oven at 425ºF for 10-12 minutes or until salmon is cooked.

Oven-Roasted Tomatoes with Zucchini Noodles

Zucchini noodles, or zoodles, are a nice low carb alternative to conventional pasta that can be used in a variety of healthy low carb meals. You can spiralize zucchini into noodles at home or you might be able to find pre-spiralized zucchini noodles at some stores.

This recipe combines zoodles with oven-roasted tomatoes, garlic, and olive oil for a light and satiating dinner. First, toss a container of grape tomatoes with a few tablespoons of olive oil and season with salt and pepper.

Roast them at 400ºF on a foil-lined baking sheet for 15-20 minutes until blistered. Then, remove them from the oven and toss them with your zucchini noodles along with minced garlic and a little more olive oil. 

Shrimp Avocado Salad

Avocados are a creamy and tasty addition to this shrimp salad, combined with red onion, cherry tomatoes, lime juice, cilantro, and olive oil.

To make one of our favorite low carb recipes, you will first cook the deveined shrimp gently in a skillet on the stovetop with butter until they turn pink, and then remove from the heat.

While the shrimp cools, toss together diced red onions, cilantro, avocado cubes, and chopped tomatoes in another bowl along with lime juice, olive oil, salt, and pepper. Once your shrimp is cool enough, add it to the bowl with the other ingredients and gently stir before serving on dinner plates. 

Low Carb Recipes for Soup

Soups are delicious all year round, whether you prefer a hearty, belly-warming recipe or a cold soup for summer nights. And regardless of if you’re on a keto, Whole 30, or low carb diet, you’re in luck! 

Soups can serve as  some of the best quick low carb meals and snacks that won’t push you over your limits for the day. They also  provide you with the flavors you know and love.

Cheesy Broccoli and Cauliflower Soup

Broccoli and cauliflower are two nutrient-packed veggies that contribute minimal amounts of carbs to your day. They blend deliciously with cheese to make a warm and flavorful soup.

To make one of our favorite easy low carb soup meals, you can blend together cooked broccoli and cauliflower florets with heavy cream, broth, water, butter, and cheddar cheese. Season with salt, pepper, garlic powder, onion powder, thyme, or other herbs of your choice.

Instant Pot Creamy Tuscan Soup

Typically higher-carb ingredients used in this soup like potatoes and beans are replaced with low carb alternatives.

Instead, highlight kale, sun-dried tomatoes, and Italian sausage, or you could toss in some Chomps meat sticks at the end instead. A heavy cream and broth base, plus Parmesan cheese, makes for a creamy and delicious low carb meal. 

Tomato Zucchini Soup

For a totally plant-based take, this low carb recipe only requires vegetable broth, tomato sauce, onion, zucchini, garlic, and Italian seasonings like fresh basil. The best part about this soup is that you probably have most of the ingredients in your kitchen already.

Simply saute the onion and zucchini to soften them and then mix in the tomato sauce and vegetable broth on the skillet. Use an immersion blender or pour the ingredients into a food processor to combine until smooth. 

Low Carb Recipes for Dessert

Going low carb but don’t want to nix the sweets? No problem. All you need to create low carb recipes is a few ingredients and an open mind to try something new. 

Low Carb Lemon Mousse Pudding

Pudding couldn’t be easier to make. It only requires a sugar-free pudding mix and for you to substitute heavy cream instead of regular milk to give it a thicker mousse texture. 

Combine until well-blended, and then place it in the fridge to thicken and set. Use lemon pudding mix to make a creamy lemon mousse. 

Almond Butter Cookies

If you like peanut butter cookies, you’ll enjoy the even lower carb content of almond butter cookies. For one of our favorite low carb meal ideas, all you need to make them is a cup of almond butter, a low-calorie sweetener of your choice, an egg, and sugar-free vanilla extract.

Combine the ingredients, roll them into balls, and place them evenly spaced on a baking sheet. If you like, use a fork to gently press a pattern onto each one and then bake at 350ºF for 12-15 minutes.

Berry Dessert Omelet

If you’re a fan of breakfast omelets or savory egg dishes, check out the dessert omelet using low carb berries. You’ll start this low carb recipe by separating a few eggs. 

The whites will be whipped, while the yolks are mixed with a low carb sweetener of your choice. Combine these over melted butter on a skillet, broil, and fold over the omelet when the bottom is well-cooked. Top with berries.
