Why is breakfast important?

With so many tasks on your to do list, you may be wondering why you should prioritize eating breakfast every day. When you go to sleep at night (ideally for 8 hours), your body “fasts.” Then, when you eat breakfast the next morning, your body’s supply of glucose is restored, in addition to energy levels and increased alertness.

Breakfast also helps supply the essential nutrients your body needs to stay healthy! When you skip breakfast, it’s more difficult for your body to get the recommended daily amounts of fiber, vitamins, and minerals.

The good news is that the best vegetables aren’t just for lunch or dinner time … they can be used for breakfast, too! Getting a serving of vegetables during breakfast is a sneaky way to incorporate fiber and nutrients into your diet.

Starting your day off with a healthy veggie can also help you cut down on unwanted calories and cravings later on, because you’ve eaten a satisfying meal first thing in the morning. Popular breakfast veggies include hash brown potatoes, roasted peppers, mushrooms, cherry tomatoes, and more! They’re easy to batch cook on Sunday night and enjoy for the rest of the week.

Cut up your desired breakfast veggie and mix with olive oil and your favorite seasoning (we love Everything But The Bagel). Then, roast for 20 minutes in the oven at 400 degrees.
