Peppermint Mocha

Move over Pumpkin Spice Lattes, it's the holiday season and we want everything peppermint and chocolate. This peppermint mocha is the perfect holiday treat for chilly mornings or when you want your coffee and your hot chocolate. Top your peppermint mocha with whipped cream, chopped candy canes and chocolate shavings for an indulgent touch. 

Ingredients: 

1 can full-fat coconut milk
1 cup almond milk unsweetened 
2 tbsp cacao powder (or cocoa powder) 
½-1 tsp peppermint extract (depending on how minty you like it) 
1 tsp vanilla extract
1 shot of espresso (or ½ cup cold brew) 
Toppings: Whipped cream, crushed candy canes, chocolate shavings 


Directions:

1. Combine all ingredients in a blender and blend on high.
2. Then pour into a saucepan and whisk on medium-high heat until simmering.
3. Take off of heat and add back into blender to blend once again. 
4. Pour into 2-3 mugs. Top with whipped cream and crushed candy canes. Enjoy!
