Every summer and every barbecue calls for watermelon. When you've got kabobs going on the grill, this is the salad that can perfectly compliment them and every party goer will be wanting more.
Ingredients:
- 1 large watermelon
- 2 cups arugula
- ½ cup feta cheese
- 1 large handful of mint leaves
- 1 large cucumber
- ¼ cup hemp seeds

Dressing:
- â…“ cup olive oil
- 2 tbsp apple cider vinegar
- 1 tsp honey
- ½ tsp salt
- ¼ tsp pepper
Directions:
- First chop up your watermelon into hunks. Place on top of a bed of arugula.
- Next add in your feta, sprigs of mint, chopped cucumber and then sprinkle with hemp seeds for a bit of protein. Mix up your dressing and toss to coat. Serve with big wooden spoons on a serving platter. Enjoy!
