Instructions:

  1. Preheat the oven to 390F. Trim any excess fat off the pork rind until the skin is very thin.
  2. Score the skin side of the pork rind in a square or diamond pattern with a sharp knife. This helps you be able to break the rind up after it's cooked.
  3. Salt both sides of the rind.
  4. Add the olive oil to your roasting tray.
  5. Put the pork rind skin side up on the tray.
  6. Cook for 10 minutes. After 10 minutes, flip the rind over.
  7. Cook for ten more minutes and then take it out of the oven.
  8. Pour off any extra fat and save for future cooking.
  9. Cook for another 10-15 minutes until the skin looks cracked and bubbly.
  10. Remove from the oven and cool.
  11. Cut or break into small pieces and enjoy.

  1. Preheat oven to 350F. Line a baking sheet with baking paper. Place almond flour in a large bowl and set aside.
  2. Place mozzarella cheese in a microwave-safe bowl and microwave for 1-2 minutes.
  3. Place the melted mozzarella into the almond flour bowl and mix until a thick dough is formed.
  4. Roll out the dough between two sheets of parchment paper. It should be ¼ inches thick.
