Rainbow Charcuterie Board

March means all things green and the start of spring which is why we threw together this Rainbow Charcuterie Board. Not only is it a great way to host a get together for St. Patrick's Day while keeping things healthy and fun but it brings a bright pop of color to any gathering.

Ingredients:

  • 8oz raw broccoli
  • 4oz snap peas
  • 2 thinly sliced persian cucumbers
  • 1 bag pea crisps
  • 2 handfuls green grapes
  • Gold chocolate coins
  • 4oz Spinach Artichoke Dip
  • 4oz Trader Joe's Green Goddess Dip
  • White cheddar cheese
  • Yogurt covered pretzels
  • 8oz raw cauliflower
  • Green bell peppers

Directions:

  1. First create the “rainbow” with the pot of gold at the bottom. This will be in the center of your board. You’ll create the rainbow by using the Chomps packaging with the packaging showing. It doesn’t have to be perfect – just make it fun! Then at the bottom put a few bits of cauliflower for “clouds” and then chocolate coins beneath it. Look, you made yourself a Chomps pot of gold!

  2. Surround the rainbow with all other green veggies, pretzels and the dips: green goddess dip and spinach artichoke in ramekins. If you can find green tortilla chips (spinach or veggie) chips, add those in too for a little extra green!

  3. No need to include any unopened raw Chomps on the board but if you want – go for it. Enjoy!
